Ingredients
Salad
- 8 mini chorizo sausages
- 100g cherry tomatoes
- 2 handfuls watercress
- 1 tsp Dijon mustard
- 1 tbsp olive oil
- 100g Baladna feta
- ½ avocado
- to serve crusty bread
How it's made!
1. Heat a large pan over medium-high heat and cook the mini chorizo sausages for 5-7 minutes or until crispy and cooked through.
2. In a mixing bowl, whisk together 1 tsp of Dijon mustard and 1 tbsp of olive oil.
3. Add the halved cherry tomatoes to the mixing bowl and toss well to coat in the dressing.
4. Arrange the watercress on a serving platter.
5. Add the dressed cherry tomatoes to the platter.
6. Crumble 100g of Baladna feta cheese over the salad.
7. Add the cooked mini chorizo sausages and sliced avocado on top of the salad.
8. Serve the chorizo and feta salad with crusty bread.
