Pearl Barley
- 200g pearl barley
- 300g sweet potato, peeled and diced
- 1 head red cabbage, shredded
- a bunch of fresh coriander, chopped
- 250g halloumi, sliced
- 2 red chilies, chopped
- 2 limes, juiced
- 2 tbsp smooth peanut butter
How it's made!
- Rinse the pearl barley thoroughly and cook it according to the package instructions until tender.
- While the pearl barley is cooking, preheat the oven to 400°F (200°C).
- Arrange the diced sweet potatoes on a baking sheet and roast them in the preheated oven for 20-25 minutes, or until they are tender and lightly browned.
- In a small mixing bowl, whisk together the lime juice and smooth peanut butter until the mixture is smooth and fully combined.
- In a pan, fry the halloumi slices until they are golden brown on both sides.
- In a large mixing bowl, combine the cooked pearl barley, roasted sweet potatoes, shredded red cabbage, chopped fresh coriander, and chopped red chilies. Toss well to combine.
- Divide the pearl barley mixture among serving bowls and top with the fried halloumi slices.
- Drizzle the peanut dressing over the top of each bowl and serve immediately.
