Halloumi Buddha Bowl

Ingredients

Pearl Barley
  • 200g pearl barley
  • 300g sweet potato, peeled and diced
  • 1 head red cabbage, shredded
  • a bunch of fresh coriander, chopped
  • 250g halloumi, sliced
  • 2 red chilies, chopped
  • 2 limes, juiced
  • 2 tbsp smooth peanut butter

How it's made!

1. Rinse the pearl barley thoroughly and cook it according to the
package instructions until tender.
2. While the pearl barley is cooking, preheat the oven to 400°F (200°C).
3. Arrange the diced sweet potatoes on a baking sheet and roast them in the preheated oven for 20-25 minutes, or until they are tender and lightly browned.
4. In a small mixing bowl, whisk together the lime juice and smooth peanut butter until the mixture is smooth and fully combined.
5. In a pan, fry the halloumi slices until they are golden brown on both sides.
6. In a large mixing bowl, combine the cooked pearl barley, roasted sweet potatoes, shredded red cabbage, chopped fresh coriander, and chopped red chilies. Toss well to combine.
7. Divide the pearl barley mixture among serving bowls and top with the fried halloumi slices.
8. Drizzle the peanut dressing over the top of each bowl and serve immediately.
