Greek Yogurt Banana Bread

Ingredients

Bread
  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup packed light brown sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 very ripe, darkly speckled bananas, mashed well
  • 1/4 cup plain Greek yogurt
  • 2 large eggs
  • 1/4 cup vegetable oil
  • 2 1/2 teaspoons vanilla extract
  • 1 cup chopped walnuts, pecans, or chocolate chips (optional)


How it's made!

1. Preheat the oven to 350°F (175°C). Grease a 9x5-inch (23x13 cm) loaf pan with cooking spray or butter.
2. In a large mixing bowl, whisk together the flour, sugar, brown sugar, baking soda, and salt until well combined.
3. Add the mashed bananas, Greek yogurt, eggs, vegetable oil, and vanilla extract to the dry ingredients. Mix well until all the ingredients are combined and the batter is smooth.
4. Fold in the chopped walnuts, pecans, or chocolate chips, if using.
5. Pour the batter into the prepared loaf pan and smooth out the top with a spatula.
6. Bake for 50-60 minutes, or until a toothpick inserted into the center of the bread comes out clean.
7. Remove the bread from the oven and let it cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
8. Slice and serve the banana bread, either warm or at room temperature.
