Greek Yogurt Banana Bread

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup packed light brown sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 very ripe, darkly speckled bananas, mashed well
  • 1/4 cup plain Greek yogurt
  • 2 large eggs
  • 1/4 cup vegetable oil
  • 2 1/2 teaspoons vanilla extract
  • 1 cup chopped walnuts, pecans, or chocolate chips (optional)

How it's made!
    • Preheat the oven to 350°F (175°C). Grease a 9x5-inch (23x13 cm) loaf pan with cooking spray or butter.
    •  In a large mixing bowl, whisk together the flour, sugar, brown sugar, baking soda, and salt until well combined.
    • Add the mashed bananas, Greek yogurt, eggs, vegetable oil, and vanilla extract to the dry ingredients. Mix well until all the ingredients are combined and the batter is smooth.
    • Fold in the chopped walnuts, pecans, or chocolate chips, if using.
    •  Pour the batter into the prepared loaf pan and smooth out the top with a spatula.
    • Bake for 50-60 minutes, or until a toothpick inserted into the center of the bread comes out clean.
    • Remove the bread from the oven and let it cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
    • Slice and serve the banana bread, either warm or at room temperature.
