Ingredients
  •  2 tablespoons olive oil
  •  1 onion, finely chopped
  •  1 red bell pepper, diced
  •  2 garlic cloves, minced
  •  3 cups tomato puree or crushed tomatoes
  •  1 teaspoon paprika
  •  ½ teaspoon cumin
  •  Salt and pepper to taste
  •  4 eggs
  •  1 cup shredded mozzarella
How it's made!
    •  Heat olive oil in a large pan over medium heat.
    •   Add the chopped onion and bell pepper, and cook until softened.
    •   Stir in the garlic and cook for another minute.
    •   Add the tomato puree, paprika, cumin, salt, and pepper. Simmer for 10 to 15 minutes until slightly thickened.
    •   Make small wells in the sauce and crack the eggs into them.
    •  Cover and cook until the eggs are set to your liking.
    •  Sprinkle shredded mozzarella over the top, cover again, and cook until the cheese melts.
    •  Garnish with fresh parsley and serve warm.
    • Tips
    • For a richer flavor, add a pinch of chili flakes.
    •  Serve with warm bread for a complete Suhur meal.
