Cheese Cauliflower Breadsticks

  • 1 medium head cauliflower
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup shredded cheddar cheese
  • 1 large egg
  • 1/4 cup chopped fresh basil
  • 1/4 cup chopped fresh parsley
  • 1 garlic clove, minced
  • 1 teaspoon salt
  • 1/2 teaspoon pepper  
How it's made!
    • Preheat the oven to 375°F (190°C).
    • Cut the cauliflower into florets and place them in a large pot. Add enough water to cover the florets and bring the water to a boil.
    • Once the water is boiling, reduce the heat to medium and let the cauliflower simmer for about 5-7 minutes, or until it is tender but still slightly firm.
    • Drain the cauliflower in a colander and let it cool for a few minutes.
    • In a large mixing bowl, whisk the egg and then add in the mozzarella cheese, Parmesan cheese, cheddar cheese, chopped basil, chopped parsley, minced garlic, salt, and pepper. Mix well.
    • Add the cooked cauliflower to the mixing bowl and stir until the cauliflower is coated with the cheese mixture.
    • Grease a medium-sized baking dish with cooking spray or butter. Transfer the cauliflower mixture to the baking dish and spread it out evenly.
    • Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly and the cauliflower is tender.
    • Once done, remove the baking dish from the oven and let it cool for a few minutes before serving. Garnish with additional chopped herbs if desired.
    • Enjoy your delicious and cheesy cauliflower bake as a main dish or a side dish
