- 1 medium head cauliflower
- 1/2 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1/2 cup shredded cheddar cheese
- 1 large egg
- 1/4 cup chopped fresh basil
- 1/4 cup chopped fresh parsley
- 1 garlic clove, minced
- 1 teaspoon salt
- 1/2 teaspoon pepper
How it's made!
1. Preheat the oven to 375°F (190°C).
2. Cut the cauliflower into florets and place them in a large pot. Add
enough water to cover the florets and bring the water to a boil.
3. Once the water is boiling, reduce the heat to medium and let the
cauliflower simmer for about 5-7 minutes, or until it is tender but
still slightly firm.
4. Drain the cauliflower in a colander and let it cool for a few minutes.
5. In a large mixing bowl, whisk the egg and then add in the
mozzarella cheese, Parmesan cheese, cheddar cheese, chopped basil,
chopped parsley, minced garlic, salt, and pepper. Mix well.
6. Add the cooked cauliflower to the mixing bowl and stir until the
cauliflower is coated with the cheese mixture.
7. Grease a medium-sized baking dish with cooking spray or butter.
Transfer the cauliflower mixture to the baking dish and spread it
out evenly.
8. Bake in the preheated oven for 20-25 minutes, or until the cheese is
melted and bubbly and the cauliflower is tender.
9. Once done, remove the baking dish from the oven and let it cool
for a few minutes before serving. Garnish with additional chopped
herbs if desired.
