Preheat your oven to 190°C.In a large bowl, combine the Baladna labneh, lemon juice and zest, 2 tablespoons of olive oil, minced garlic, chopped red chillies, and fresh oregano leaves. Mix well to combine.Spread the labneh mixture evenly on a large serving plate.Place the courgette slices on the grill and cook for about 5-7 minutes on each side, or until tender and lightly charred. While the courgettes are grilling, prepare the Savoury Granola. In a bowl, combine the oats, chopped hazelnuts, sunflower seeds, pumpkin seeds, sesame seeds, smoked paprika, and cumin seeds. In a separate bowl, whisk the egg white until frothy. Pour the egg white over the granola mixture and stir to combine. Spread the granola mixture out on a baking sheet lined with parchment paper.Bake in the oven for about 10-15 minutes, or until the granola is golden brown and crispy. When the courgettes are ready, arrange them over the labneh mixture on the serving plate.Sprinkle the Savoury Granola over the top of the courgettes and labneh.
